Ingredients
  1. 8 large, whole carrots, peeled
  2. 1/2 cup apple cider vinegar
  3. 4 Tbs. soy sauce (we used Bragg's Liquid Aminos)
  4. 1 tsp. liquid smoke (we used Colgin)
  5. 1 tsp. onion powder
  6. 1 tsp. garlic powder
  7. 1/2 tsp. black pepper
  8. 1/2 tsp. smoked paprika
  9. 8 hot dog rolls of choice
  10. favorite hot dog condiments: ketchup, mustard, relish, hot sauce, sauerkraut
Instructions
  1. Peel carrots and trim ends. Place in a wide pan of boiling water and cook about 5 minutes, until fork tender, but not mushy. Transfer carrots (not water) to a low, flat dish with a lid.
  2. Combine apple cider vinegar, soy sauce, liquid smoke, onion powder, garlic powder, black pepper and smoked paprika. Pour over carrots and cover. Refrigerate for at least 3 hours and up to two days.
  3. Grill or prepare as you would any other hot dogs. On the grill, carrot hots dogs cook in about 5 to 8 minutes, with a few rotations to prevent burning. Serve on your favorite rolls, with ketchup, mustard, relish, hot sauce or sauerkraut.
