Have a rough day? This is the dish for you! Not only is it delicious, but you get to smash the heck out of some potatoes! We take taters to a whole new place with this recipe. It’s like a cross between baked potatoes and chips, but all coated in a yummy curry paste with garlic and ginger. The spices will warm you from inside while the potatoes give you the comfort you need from a long day at school, an annoying co-worker or just weather chills. Oh – and did we mention you get to smash the potatoes?
As written, this recipe is vegan and gluten-free. If you aren’t a fan of spicy foods, omit the red pepper flakes and cut back on the curry powder. As a side dish, this serves 4 to 6; however, I have eaten a whole batch by myself. Just sayin’.
