Sometimes you just need to get food on the table fast. Cuz it’s late and you just got in; or because you have a spouse or child that needs fed; maybe you’re just hungry! This recipe comes together in only a few minutes. You honestly can’t get delivery faster than you can get this hearty, flavorful chickpea salad on the table.
It’s versatile too. You can stuff it into pita or tortilla wraps, serve it with lettuce cups, eat it like dip with corn chips or even use it to top a pile of greens and veggies for a nice summer lunch or dinner. We have been known to eat it with a spoon. Ahem.
Spicy Broccoli Chickpea Salad
1 can chickpeas, rinsed and drained
3 Tbl. vegan mayo (we used Vegenaise)
2 Tbl. sriracha or other hot sauce (we used Trader Joe’s)
1 Tbl. nutritional yeast
2 tsp. onion powder
1 tsp. garlic powder
salt and pepper, to taste
2 cups broccoli, florets, bite-size
1 cup tomato, diced
Add chickpeas, vegan mayo, sriracha, nutritional yeast, onion powder, garlic powder and salt/pepper to a large bowl. Using a potato masher or sturdy fork, mash the ingredients to combine. The resulting texture should be almost smooth and creamy with only small pieces of beans left. Gently fold in the broccoli florets and diced tomato until coated in chickpea mixture.
Serve as desired on bread, wraps, lettuce – however you like!
